Founded in 1832, our sake brewery was established to offer a fine sake to discerning travelers from Edo (present-day Tokyo) staying at Shimada-juku, a post town along the historic Tokaido road.
Since then, we have continued our business for more than 190 years, nurtured by the blessings of our local environment and the traditions and culture of the region.
Located just a two-minute walk from Shimada Station on the JR Tokaido Line, our brewery stands in the heart of the town, yet benefits from the pristine underground waters of the Oi River. We are proud to be the only sake brewery remaining in Shimada, cherished by the local community.
We place great importance on the preparation of our raw ingredients, using modern rice-polishing equipment to polish our own sake rice in-house.
We believe that great sake begins with koji-making that engages all five senses, requiring careful attention, hands-on craftsmanship, and time. For this reason, we use traditional 10-kilogram koji trays for every type of sake we produce, from everyday sake to premium Daiginjo.
Our goal is to craft food-friendly sake with the refined, mellow aromas characteristic of Shizuoka yeast and a rich, full-bodied flavor that adds depth to every sip and complements a wide variety of dishes.
Since our founding, our commitment to creating distinctive local sake that expresses its own unique character has never changed.
In 1979, we joined Japan Prestige Sake Association, a nationwide network dedicated to promoting.
